Fruity Pebbles Ice Cream Cake

My brothers birthday was a few weeks ago, and two of his favorite things are ice cream and fruity cereal. I had to combine those two things to make an amazing cake for him! Keep reading to find out how I made it!

So, believe it or not, this cake is actually super simple to make. You only need three ingredients! First, put a gallon of vanilla ice cream into the fridge so it can start to soften (the recipe I found said to use a half gallon, but I ended up using a whole gallon). Then, fill a mixing bowl with about 4.5 cups of fruity pebbles. Next, you are going to put about 2 cups of white melting wafers in the microwave until they're nice and smooth. Then, pour the chocolate over the fruity pebbles and stir until they are all coated. By this point, your kitchen will smell delicious, but you're not finished yet! While the mixture is still wet, flatten it onto a wax-paper covered cookie sheet and wait for it to cool.

By the time your mixture has cooled, your ice cream should be starting to soften. Take it out of the fridge so it can soften a little more quickly while you do the next step. So, next, you are going to take your flat fruity pebble creation and break it into tiny pieces. Some pieces will be smaller than others. Once the ice cream is softened, get another ice cream bowl and pour all of your ice cream into it. Mix in about half of the fruity pebble pieces into your soft ice cream. Use the smaller pieces for this part. Once the pieces are all mixed in, spread your ice cream mixture into a springform pan. You want to make sure you are using a spring form pan so that you can eventually take the sides off and cut your cake.

At this point, you are going to take the rest of your fruity pebbles pieces and press them into the top of the ice cream to create a crunchy crust! Once you have done this, freeze the cake for a few hours or overnight and you are finished! When your cake is good and frozen, take the sides off of your freeform pan. Run a knife under some hot water before attempting to cut the cake, because the crust makes it pretty hard to cut. This cake turned out really great and it went over well with my whole family.
