What I Eat in a Day: Picky Eater Problems

I will be the first to admit that I am one of the pickiest eaters out there. I could easily survive off of greasy Dominos pizza and Wendys chicken nuggets! However, I have been attempting to expand my diet by welcoming some new, healthier foods into my life. I am hoping that I'll be able to help some of my fellow pizza-loving picky eaters out there by writing about some of my go-to meals.
P.S. I am definitely not skilled in the arts of food presentation or food photography, so don't judge!
BREAKFAST

Lately, my favorite thing to eat for breakfast is some yogurt. I am usually a grab-and-go type of breakfast eater because I have class most mornings. When I have a little extra time, I'll scoop some yogurt into a bowl and sprinkle some chia seeds on top. Delicious! Chia seeds not only have soo many health benefits and nutrients, but they keep you full for a pretty long time. I love that because I won't be starving in the middle of my three hour morning class. I used blueberry yogurt, but feel free to use whatever your favorite flavor is! And try adding other things, like fruit and granola. Yummy!
LUNCH

Once again, don't judge the quality of my picture-taking skills! I am someone who would eat pizza every single day for every single meal. I never get tired of it! But, that is neither realistic nor healthy. So, I put a slightly healthier spin on my favorite food for this lunch option. This is a pizza quesadilla! I am sure this has been made by a bunch of other people, but I kind of just thought of the idea and decided to try it out. It is actually really good! All I did was spread some tomato sauce on a tortilla, add some fat free mozzarella, and put another tortilla on top (and cooked it obviously). It is so quick and easy and perfect for me when I am craving pizza but don't want to deal with the guilt that comes along with it.
DINNER

For dinner, I made myself a delicious grilled chicken salad! Most of my pickiness has to do with texture. For example, I HATE anything with a slimy or soggy texture. So, I don't eat my salad with dressing on it. A lot of people probably think that is strange, but I actually don't mind eating the salad without dressing, as long as the salad has a little something extra in it. To make the chicken, I marinated it overnight in some Italian salad dressing (I like the flavor of the dressing, I just can't deal with the texture), before cooking it. I also added a couple of seasoned croutons in there for some extra flavor and crunch. This is my favorite way to eat a salad. It tastes delicious and I don't have to deal with that after-dinner guilt!
As a picky eater, it is so easy to eat pizza and chicken nuggets for every meal. I know it's not much, but I have really been making an effort to expand what I eat in a healthier way.
